Grilled Chicken Tacos

Since grilling season is here, I am always on a search for something new to try on the grill.  I have made this recipe many times, with the help of my husband the Grill Master.  I always have loved Mexican food, but I never made my own guacamole before.  One day my husband requested guacamole and so I went searching online and found a few recipes, and I kind of combined them together, but something was still missing.  So when I found this recipe and with the guacamole recipe with it, it was a winner for all.  We have had this chicken in tostada form and in regular taco style so it is very versatile, it would also be great on a salad.  Happy Grilling!

Grilled Chicken Tacos

• 1 lime
• 3 Tbsp. extra virgin olive oil
• 1 clove garlic, minced
• 3 boneless skinless chicken breast (about 1 1/2 pounds)
• kosher salt
• fresh ground pepper

Toppings: lettuce, tomatoes, sour cream, guacamole, etc.

1. In a gallon sized Ziploc bag, combine juice from 1 lime, olive oil, and garlic. Season with salt and pepper. Add chicken and marinate for 1 hour.
2. Preheat grill to high. Grill chicken for about 4-6 minutes per side until juices run clear.
3. Serve on tortillas of choice with toppings.  Or you can buy the 6 inch tortillas, brush them with olive oil and put them on the grill until crispy and make tostadas.

Easy Guacamole

• 2 medium ripe avocados (ripe = soft to the touch)
• 1/2 small onion chopped
• 1/2 of a 4 oz can diced green chile peppers
• 1 Tbsp. fresh cilantro, chopped (optional, I forgot to buy this one time and it was still yummy)
• 1 Tbsp. lime juice
• 1 clove of garlic, minced
• 1 medium tomato, seed removed and chopped (optional)

1. Cut avocados in half. Remove pit (set the pit aside). Dice and scoop out of skin.
2. Place avocado in a bowl and mash to desired consistency.
3. Mix in remaining ingredients. Serve immediately or place in the fridge with pits added to the bowl. Putting the pits in the bowl will keep the guacamole from going brown.
