Fortune Cookes

I got this recipe from Aria's cookbook she got for Christmas last year. Aria loves to bake with me and is always wanting to make something from her cookbook. We have made a few things and they have turned out well. A couple weeks ago we thought we would try our hand at "homemade fortune cookies". They were fun to make and Aria loved decorating and taking them to her friends. I also printed out some fortunes I found online or you could make up your own for the occasion to put in your cookie.

Fortune Cookies

1 package refrigerated pie crust (I did not have any on hand so I made mine from scratch)

1 tablespoon water

Colored decorating sugars or cinnamon and sugar, placed in small saucers

Preheat oven to 350 degrees

Write a note of good fortune or draw little symbols on two inch long pieces of paper with a pen or non-toxic marker.

Sprinkle flour on your work area and smooth it with your hand.

Unfold one pie crust at a time and place on work area. Turn over crust to dust both sides with flour. Flatten and smooth out wrinkles with rolling pin. With a 3 inch round cookie cutter, cut out 4 to 6 circles per pie crust. You may reroll scraps if you wish.

Put one fortune in the center of each circle and fold in half. Then fold the semicircle in half.

Brush each fortune cookie with a little water to moisten. Dip one side of each cookie into colored sugar, then place on cookie sheet, sugar-side up. Place cookies 2 inches apart.

Bake for 15-20 minutes or until lightly browned. Carefully take from oven and cool 5 minutes before removing from pan.

Makes 12 fortune cookies.

Apple-Berry Salsa with Cinnamon Chips

Found this recipe a couple weeks ago and I have already made it twice. Once for a friend and then I had to make it for my family and we gobbled it up in one sitting. I got this recipe from the Utah State University Extension. We had gone to get our pressure cooker gauge tested at the extension office and they gave us a newsletter and this recipe was in it. Enjoy!

Apple-Berry Salsa
2 medium Granny Smith apples, peeled and chopped
1 cup strawberries, hulled and chopped
1 kiwi, peeled and chopped (I actually did two, we love kiwi)
1/4 cup orange juice
2 Tablespoons brown sugar
Combine fruit. Stir orange juice and brown sugar together. Mix with fruit. Serve with cinnamon chips
Cinnamon Chips
2 large flour tortillas (make more because everyone loves them)
water
Cinnamon-sugar mixture
Preheat oven to 475 degrees. Brush tortillas with water. Sprinkle with cinnamon-sugar mixture. Cut into wedges and place on cookie sheet or baking stone. Bake for 5-7 minutes or until golden brown. Remove from baking sheet and place on cooling rack to cool.

Holy Tomatoes!

This is our third year in having our own garden and in my gardening life I have never seen such big tomatoes! They are beautiful and I am not a big tomato lover. My husband and I are so happy with our skills that it must be documented.
Here is the biggest one! A picture cannot do it justice. I would say you could come over and see it yourself but it has already been bottled.

Out beautiful bottled tomatoes

The spaghetti made from the beautiful bottled tomatoes.
My mother as long as I can remember has been bottling tomatoes. She uses her stewed tomatoes in many ways. She makes goulash, lasagna, spaghetti or anytime a recipe calls for stewed tomatoes. Today I am going to share my mom's spaghetti sauce with you. It is very simple and delicious.
Mom's Spaghetti Sauce
1 lb ground hamburger
1 quart tomatoes, I drain about half of the liquid so the spaghetti is not watery.
1- 6 oz can tomato paste
2- 8 oz. tomato sauce
1 packet of spaghetti seasoning
1 can of mushrooms, drained (optional)
Brown hamburger and drain then add the rest of ingredients; bring to a boil and then simmer until your spaghetti noodles are done.

Teriyaki Chicken

My husband gave me a cookbook for Mother's Day this year and one day when I was asking him what he wanted for dinners for the week he said "How about you pick something from your new cookbook?" So this is the first recipe I made from my new cookbook called Worldwide Ward Cookbook. I really like teriyaki chicken and have never made it before and I am sure there is many variations. This recipe was very simple and everyone liked it.
Teriyaki Chicken
2 Tbsp fresh peeled and minced ginger
3-4 cloves fresh garlic, peeled and minced
1/2 cup soy sauce
1/2 cup water
1/2 cup packed brown sugar
8-12 chicken thighs, legs or wings, skin on
Combine minced ginger, minced garlic, soy sauce, water and brown sugar. Place chicken , skin side down in a dish; pour marinade over the chicken, lifting chicken to allow marinade under it. Cover with foil and bake at 400 degrees for 45 minutes. Remove foil, turn chicken skin side up, and bake uncovered an additional 30-45 minutes, until nicely browned. Serve chicken with cooked rice. Pour teryiaki marinade over all. Makes 4-6 servings.
