Holy Tomatoes!

This is our third year in having our own garden and in my gardening life I have never seen such big tomatoes! They are beautiful and I am not a big tomato lover. My husband and I are so happy with our skills that it must be documented.
Here is the biggest one! A picture cannot do it justice. I would say you could come over and see it yourself but it has already been bottled.

The spaghetti made from the beautiful bottled tomatoes.
My mother as long as I can remember has been bottling tomatoes. She uses her stewed tomatoes in many ways. She makes goulash, lasagna, spaghetti or anytime a recipe calls for stewed tomatoes. Today I am going to share my mom's spaghetti sauce with you. It is very simple and delicious.
Mom's Spaghetti Sauce
1 lb ground hamburger
1 quart tomatoes, I drain about half of the liquid so the spaghetti is not watery.
1- 6 oz can tomato paste
2- 8 oz. tomato sauce
1 packet of spaghetti seasoning
1 can of mushrooms, drained (optional)
Brown hamburger and drain then add the rest of ingredients; bring to a boil and then simmer until your spaghetti noodles are done.

what I would give to have that fortune with growing tomatoes - gets too hot and humid down here - thanks for sharing...

We also have a bumper crop of tomatoes but the lack of sun meant many failed to ripen. Here's a trick I picked up. Cut the remaining tomatoes fro the plant ( but leave attached to the vine), pop inside a brown bag with an old banana. Bingo! ripe tomatoes!

What a great harvest of tomatoes! I had to buy mine this year, but still made plenty of spaghetti sauce and salsa.
