Three-Cheese Potatoes



At the end of each term if Aria gets good grades she gets to pick a restaurant and we go out to eat.  Aria loves steak and she wanted to go out for steak.  There really isn't to many good steak places near us so since we were a little late rewarding her we thought we would grill our own.  Honestly my husband the grill master can cook a better steak than some restaurants I have been to. 

We were talking to our friends the Grows and they pointed us to their meat man, Don's Meat in Sunset.  Brian headed on over with the girls, bad idea, and he came back with 4 huge steaks!  He let Aria pick her own steak, of course she picked the most expensive one, called the Las Vegas with bacon wrapped around it.  It was her pick and she is an awesome student so I let it slide.  But these steaks were amazing!, still thinking about them. 

So to go on the side of our steaks we made some yummy potatoes, and worked out the next day extra hard to burn all these calories, but it was worth every bite.


Three-Cheese Potatoes Recipe

  • 3 large potatoes, peeled and cut into 1-inch cubes
  • 1 medium onion, chopped
  • 3 tablespoons grated Parmesan cheese
  • 1 tablespoon minced chives (optional)
  • 1/2 teaspoon seasoned salt
  • 1/4 teaspoon pepper
  • 2 tablespoons butter
  • 1/2 cup crumbled cooked bacon (optional, we have made them with and without)
  • 1/2 cup shredded part-skim mozzarella cheese
  • 1/2 cup shredded cheddar cheese


Directions

  • In a large bowl, combine the first six ingredients. Transfer to a double thickness of greased heavy-duty foil (about 18 in. square) or you can make 3-4 individual foil squares, so everyone can have a customized potato. Dot with butter.
  • Fold foil around potato mixture and seal tightly. Grill, covered, over medium heat for 15-18 minutes on each side or until potatoes are tender. If doing individual packets they take about 10 min on each side.
  • Carefully open foil. Sprinkle the bacon cheeses over potato mixture. Grill 3-5 minutes longer or until cheese is melted. Open foil carefully to allow steam to escape. Yield: 4-6 servings.
