Recipe of the Week-Salmon Patties

If you are on a budget but still like to have fish for dinner this is a great recipe. These salmon patties are made from canned salmon, yeah does not sound to appealing but it really is not that bad. Plus if you are having a hard time getting your kids to eat fish this also might be a great recipe for you.


Salmon Patties


2- (6 oz.) cans of boneless, skinless salmon; drained (Bumble Bee is the only brand that I think makes it)



1 egg


1 tablespoon or so of Mayo or Miracle Whip


6-10 Saltine Crackers crushed to fine crumbs


dash of pepper


Beat egg in medium size bowl, add mayo or Miracle Whip; mix


Add Salmon and pepper to egg mixture; mix


Then add saltine crumbs until mixture sticks together and can be made into patties.


Heat on high a few tablespoons of olive oil or vegetable oil in a skillet. Add the patties and cook on one side until brown then flip. Should only take 5 min or so on each side. The salmon is already cooked in the can so you only need to heat it through and brown the outsides.

Yield-4 patties
