I was thinking about what I would want to blog about besides my great family. I was thinking of the things I like to do and one of them is cooking and baking. So I thought it would be fun to do a recipe a week and post it on the blog. The first recipe is Banana Chocolate Chip Muffins. These are really yummy, the kids love to eat them up. You can make them mini, perfect for kids or regular size.
Banana Chocolate Chip Muffins
1 3/4 cups all-purpose flour
1/2 cup white sugar
2 1/2 tsp baking powder
1/2 tsp salt
1 cup semi-sweet chocolate chips
1/2 tsp cinnamon
Mix above ingredients and make a well in the center.
1 egg, beaten
1/4 cup vegetable oil
1/4 cup milk
1 cup mashed bananas
1 tsp vanilla
Mix together and pour into bowl of dry ingredients. Stir until moisten. Batter will be lumpy. Fill greased muffin cups 3/4 full.
Bake at 400 degrees for 20 to 25 min for regular size or 10 min. for mini size.
Helpful hint: When you have filled all the muffin cups and there is some empty ones, fill the rest with a little water and your muffins will be moister.
