Tis' the season for zucchini! When you open your front door and find gifts of green squash on your doorstep left by the zucchini fairy. I found this recipe from a blog I love called http://realmomkitchen.blogspot.com/. I do not like zucchini only in the savory form and you all know how I love chocolate so I could not pass up making this bread. It was really good and my whole family loved it, even Brian who is not a big fan of zucchini bread. We had eaten both loaves within days. So thank you zucchini fairy!
2 cups white sugar
1 cup vegetable oil
3 eggs
3 teaspoon vanilla extract
2 cups grated zucchini
3 cups all-purpose flour
1 teaspoon baking soda
1/4 teaspoon baking powder
1 teaspoon salt
1 teaspoon cinnamon
1/2 cup cocoa powder
1 cup chocolate chips (Toss chocolate chips with a little flour before adding to the mixture. This prevents them from sinking to the bottoms of the bread.)
Mix first four ingredients together. Then mix in zucchini, followed by remaining ingredients. Put in two greased and floured loaf pans. Bake at 350 for 1 hour
