Aloha Chicken
4 Boneless, skinless chicken breasts cut up into 1 inch pieces
1-2 tablespoons flour
1 tablespoon vegetable oil
1- 20oz can pineapple chunks
2 teaspoons cornstarch
3 tablespoons honey
2 tablespoons teriyaki sauce
1/4 teaspoon pepper
1 green pepper cut into strips
Hot cooked rice
Place flour in a large resealable plastic bag; add chicken pieces and shake to coat. In a skillet over medium high heat, cook chicken in oil until brown. Remove chicken and keep warm. Drain pineapple reserving 3/4 cup juice. (Discarding remaining juice or save for another use.) In a small bowl, combine cornstarch and reserved juice until smooth. Add to skillet, stir in honey , teryiaki sauce and pepper. boil for 30 seconds or until thickened. Add pineapple, chicken, and green pepper to skillet, heat through. Serve over rice.
Hint: I usually put the lid on the skillet and turn it down to simmer and let it finish cooking while I cook the rice.
