Let's Go Bananas!


Let's do a Banana Roundup!  Going through my archives I found a few recipes using bananas and I thought I would gather them all together for you in one post.  And I added two new recipes just for you, now don't you feel extra special!

First recipe is my mom's tried and true banana bread!  My most favorite and you must try it today, unless you don't have ripe bananas then you have to wait. 

My Mom's Banana Bread

1 3/4 cups all purpose flour
2 tsp baking powder
1/4 tsp baking soda
1/3 cup shortening
2/3 cup sugar
2 eggs
1 cup ripe bananas mashed (2 or 3)
Chocolate Chips optional

Sift dry ingredients together.  Cream shortening and sugar together with mixer.  Add eggs and beat well.  Add dry ingredients, alternating with banana.  Pour into greased loaf pan.  Bake 350 for 1 hour and toothpick comes out clean.

When I have some ripe bananas, chocolate chips and cool whip I must make banana pancakes.  My kids love them and while we eat we must listen to the Banana Pancake Song by Jack Johnson.  

Betty Crocker Pancakes

1 large egg
1 cup flour
3/4 cup milk (I like to add a little extra)
1 Tablespoon sugar
2 Tablespoons oil
3 tsp. baking powder
1/4 tsp salt

Whisk dry ingredients together in one bowl.  Whisk wet ingredients in another.  Pour dry into wet and mix until not so lumpy.  

To make banana pancakes add chopped up banana and pour in some chocolate chips to batter.  Pour onto hot skillet.  When cooled slightly add dollop of cool whip and play this song a few times.
