My husband is the grill king! I love the summer months when I can take a little break from cooking and he can take over with the grill. One of the the first meals my husband cooked for me, when we were dating, was his BBQ Chicken, and I was hooked and then married him. Today is not the BBQ chicken recipe, but it is grilled chicken with a sweet and spicy rub on the outside. I love me quick and easy recipes and this one is it. You just stir up all the spices, rub it on the chicken and send it out to the grill master. The chicken came back nice and moist on the inside and spicy on the outside.
Sweet and Spicy Chicken
2 tablespoons brown sugar
1 tablespoon paprika
2 teaspoons onion powder
1-1/2 teaspoons salt
1 teaspoon chili powder
5 boneless skinless chicken breast halves (6 ounces each)
Combine the first five ingredients; rub over chicken. Coat grill rack with cooking spray for grills or brush with olive oil before starting the grill. Grill chicken, covered, for 4-5 minutes on each side or until a meat thermometer reads 170°. Yield: 5 servings.
