It is late at night and you are craving something sweet! You scavenge through the pantry, freezer and all the cupboards to find something to satisfy your screaming sweet tooth. To your dismay there is nothing that will fill your void. You ever have one of those nights? It happens to me a lot and it takes a lot of willpower not break down and make a whole pan of brownies that I would end up eating a good portion of. I have typed up a few single serving dessert recipes that have helped me get through some rough nights.
Week 8 Weigh-In
Katrina lost 4 pounds! For a total of 8 pounds lost!
Brian lost 2 pounds ! For a total of 14 pounds lost!
3,2,1 Cake
1 box Angel Food Cake
1 box Cake Mix (any flavor)
Directions: In a Ziploc bag combine both cake mixes together and mix well.
For each individual cake serving, measure out 3 tablespoons of the cake mix combination and mix it with 2 tablespoons of water in a microwave safe container (I use a mug). Microwave on high for 1 minute and like magic you have a mini cake!
Top your little cake with cool whip, fruit, chocolate sauce etc.
Keep the cake mix in your pantry and use when ever you are craving something sweet.
The combinations are endless, but remember one of the mixes must be the Angel Food Cake.
Remember 3 Tablespoons of cake mix, 2 Tablespoons of water, and 1 minute in the microwave!
Zapped Apples
1 medium apple
1 tsp. carmel syrup
cinnamon and whipped cream
1. Wash, slice and core apple
2. Arrange apple in a microwave safe bowl
3. Sprinkle apple with cinnamon and then drizzle with syrup
4. Microwave apple on high for 1 -1 1/2 minutes top with whipped cream
Two-Minute Mug Brownie
1/4 cup flour
1/4 cup packed brown sugar
2 Tbsp unsweetened cocoa powder
Pinch salt
2 Tbsp canola or other mild vegetable oil
2 Tbsp milk, coffee or waterIn a heatproof mug or ramekin, stir together the dry ingredients until no lumps remain. Stir in the oil and milk until you have a thick paste.Microwave on high for a minute, checking it after 30 seconds (microwaves vary) – it will be done when it’s springy on top but still a bit gooey – like the very best brownie. Eat warm.

Congratulations on the weight loss, Katrina! You're doing great! And thanks for the single serve recipes. I love these. I also have a recipe for a Nutella mug cake. It's so nice to not be tempted by an entire 9X13 pan of yummies!
